Ingredients
- 1 1/2 lb. carrots, sliced
- 1/2 C. butter
- 3 eggs
- 1 tsp vanilla
- 1/4 C. all-purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 C. sugar
- 3/4 tsp ground cinnamon
Method
- Set your oven to 350 degrees F before doing anything else and lightly, grease 1 1/2-quart souffle dish
- In a pan of water, add carrots and bring to a boil
- Cook for about 20-25 minutes
- Drain well
- In a food processor, add the coked carrots and remaining ingredients and pulse until smooth
- Transfer the mixture into the prepared souffle dish evenly
- Cook in the oven for about 1 hour and 10 minutes
