Ingredients
- 1 large eggplant, pared and cubed
- 2 beaten eggs
- 1/2 C. milk
- 1/2 C. dry breadcrumbs
- 1 C. shredded American cheese
- 1/4 C. melted butter
- 3/4 C. crushed crackers
Method
- Set your oven to 350 degrees F before doing anything else and grease a casserole dish
- In a pan of salted boiling water, cook the eggplant cubes for about 15 minutes
- Drain the eggplant cubes well and transfer into a a bowl
- With a fork, mash the eggplant cubes well
- Add the 3/4 C of the cheese, milk, eggs, breadcrumbs, salt and pepper and mix until well combined
- In another small bowl, add the crackers and melted butter and mix well
- Place the eggplant mixture into the prepared casserole dish evenly and top with the cracker mixture, followed by the remaining 1/4 C of the cheese
- Cook in the oven for about 30 minutes
