Ingredients
- 4 large tomatoes, halved and seeded
- 3 egg yolks
- 2 tbsp breadcrumbs
- 1 tbsp chives
- 2 egg whites, beaten
Method
- Set your oven to 375 degrees F before doing anything else
- Carefully, scoop out the pulp from each tomato half and reserve the tomato half shells
- Then, chop the tomato pulp very finely
- In a large bowl, add the chopped tomatoes, breadcrumbs and egg yolks and mix well
- Gently, fold in beaten egg whites
- Carefully, spoon the tomato pulp mixture into each tomato shell evenly
- Arrange filled tomato shells in a flat, oven-proof baking dish
- Cook in the oven for about 12 minutes
- Remove from the oven and serve immediately with the sprinkling of chives
