Peaches And Cream Pie

Ingredients

  • Serving Size : 1
  • 1/2 cup evaporated milk
  • 1 1/2 teaspoons gelatin
  • 2 tablespoons lemon juice
  • 1 1/2 cups canned peaches – drained
  • 2/3 cup syrup from peaches
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 16 marshmallows – quartered
  • 1 tablespoon grated lemon rind
  • 1 9 inch pie shell – baked

Method

  1. Chill evaporated milk until crystallized.
  2. Soften gelatin in lemon juice.
  3. Combine peach syrup, sugar,, salt and marshmallows, and cook stirring over very low heat until marshmallows melt.
  4. Stir in softened gelatin and lemon rind.
  5. Chill until slightly thicker than an unbeaten egg white.
  6. Whip the evaporated milk until fluffy like whipped cream.
  7. Fold in cold gelatin mixture.
  8. Fold in well drained peach slices.
  9. Leave some peach slices to trim top.
  10. Put in refrigerator to chill until firm about 2 hours or more.
