Mango-Avocado Salad With Macadamias Pomegranate Seeds
Ingredients
Makes 4 servings
- 1 firm ripe mango, peeled, pitted and cut into 1/2-inch dice
- 2 ripe Hass avocados, pitted, peeled and cut into 1/2-inch dice
- 2 tablespoons fresh lime juice
- 2 teaspoons agave nectar
- 1/4 cup crushed macadamia nuts
- 1 tablespoon fresh pomegranate seeds
- 1 tablespoon fresh mint or cilantro leaves
Method
- In a large bowl, combine the mango and avocados
- Add the lime juice and agave nectar and toss gently to coat the fruit
- Sprinkle with macadamias, pomegranate seeds and mint leaves
- Serve immediately
