Ingredients
Makes 4 to 6 servings
- ¾ cup vegan vanilla yogurt
- 1/4 cup finely chopped mango chutney
- 1 tablespoon fresh lime juice
- 1 teaspoon mild curry powder
- 1 Fuji or Gala apple, cored and cut into 1/2-inch dice
- 2 ripe peaches, halved, pitted and cut into 1/2-inch dice
- 4 ripe black plums, halved and cut into 1/4-inch slices
- 1 ripe mango, peeled, pitted and cut into 1/2-inch dice
- 1 cup red seedless grapes, halved
- 1/4 cup unsweetened toasted shredded coconut
- 1/4 cup toasted slivered almonds
Method
- In a small bowl, combine the yogurt, chutney, lime juice and curry powder and stir until well blended
- Set aside
- In a large bowl, combine the apple, peaches, plums, mango, grapes, coconut and almonds
- Add the dressing, toss gently to coat and serve
