Avocado Tzatziki Chicken Salad

- 1 large ripe avocado
- 2/3 cup 2% Greek yogurt
- 1 cup grated cucumber
- 1 tablespoon minced garlic
- juice of 1/2 lemon
- 1 tablespoon chopped fresh dill
- 1/2 tablespoon olive oil
- sea salt and black pepper
- 16 ounces cooked chicken breast, shredded or chopped
- garnish: coarsely ground black pepper, red pepper flakes (optional), fresh dill
Method
- Peel and pit the avocado and mash the flesh in a medium bowl
- Add the yogurt and mix together with a spatula
- Wrap the cucumber in cheesecloth or a paper towel and gently squeeze out most of the excess water, then add the cucumber to the bowl
- Add the garlic, lemon juice, dill, and olive oil to the bowl and mix together
- Season to taste with salt and pepper
- At this point you can store the tzatziki in an airtight jar and enjoy with pita bread or your favorite crunchy vegetables-or keep going to make the chicken salad!
- Fold the chicken (see note) into the tzatziki, garnish, and enjoy!
