Cranberry-Orange Bars Recipe
Ingredients
- Serving Size : 24
- 1 cup finely chopped cranberries *
- 2 oranges – ground skins and pulp
- 1/2 cup raisins – dark or golden
- 1/4 cup brown sugar **
- 1/3 cup margarine
- 2 eggs
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1 cup unbleached white flour
- 2 teaspoon baking powder
Method
- Combine the cranberries, oranges, raisins and brown sugar in a mixing bowl.
- Set aside.
- Cream margarine until light and fluffy.
- Add 1 egg at a time and beat well.
- Blend in vanilla.
- Gradually add the flours and baking powder to the creamed mixture.
- Stir in the cranberry mixture and pour the batter into a greased 13-x-9-inch baking pan.
- Bake in a 350 F oven for 30 to 40 minutes, or until browned on top.
- Cool in the pan on a wire rack
- Cut into 24 bars
