Cranberry-Orange Bars Recipe

Ingredients

  • Serving Size : 24
  • 1 cup finely chopped cranberries *
  • 2 oranges – ground skins and pulp
  • 1/2 cup raisins – dark or golden
  • 1/4 cup brown sugar **
  • 1/3 cup margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup unbleached white flour
  • 2 teaspoon baking powder

Method

  1. Combine the cranberries, oranges, raisins and brown sugar in a mixing bowl.
  2. Set aside.
  3. Cream margarine until light and fluffy.
  4. Add 1 egg at a time and beat well.
  5. Blend in vanilla.
  6. Gradually add the flours and baking powder to the creamed mixture.
  7. Stir in the cranberry mixture and pour the batter into a greased 13-x-9-inch baking pan.
  8. Bake in a 350 F oven for 30 to 40 minutes, or until browned on top.
  9. Cool in the pan on a wire rack
  10. Cut into 24 bars
