Basic Balsamic Vinaigrette

Ingredients

Makes about ¾ cup

  • 1 tablespoon finely chopped shallots
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons balsamic vinegar
  • 1/2 cup olive oil

Method

  1. In a small bowl, combine the shallots, mustard, sugar, salt and pepper
  2. Stir in the vinegar
  3. Add the oil, whisking constantly until blended
  4. Store leftover dressing tightly covered in the refrigerator, where it will keep for 3 to 4 days
