Ingredients
- 1/4 cup Balsamic Vinaigrette
- 1 1/2 cups sliced fresh mushrooms, (about 4 ounces)
- 2 cups –
- 1 2 inch piece leaf lettuce
- 2 cups –
- 1 2 inch piece spinach
- 1 1/2 cups –
- 1 2 inch piece radicchio
- 2 tablespoons pine nuts, toasted
Method
- Heat Balsamic Vinaigrette in 10-inch skillet over medium heat.
- Cook mushrooms in vinaigrette 3 minutes; remove from heat.
- Add remaining ingredients.
- Toss 1 to 2 minutes or until greens begin to wilt.
- Serve immediately.
- Sprinkle with freshly ground pepper if desired.
- SERVINGS (ABOUT 1 CUP EACH).
