Low Fat Warm Greens With Balsamic Vinaigrette Recipe

Ingredients

  • 1/4 cup Balsamic Vinaigrette
  • 1 1/2 cups sliced fresh mushrooms, (about 4 ounces)
  • 2 cups –
  • 1 2 inch piece leaf lettuce
  • 2 cups –
  • 1 2 inch piece spinach
  • 1 1/2 cups –
  • 1 2 inch piece radicchio
  • 2 tablespoons pine nuts, toasted

Method

  1. Heat Balsamic Vinaigrette in 10-inch skillet over medium heat.
  2. Cook mushrooms in vinaigrette 3 minutes; remove from heat.
  3. Add remaining ingredients.
  4. Toss 1 to 2 minutes or until greens begin to wilt.
  5. Serve immediately.
  6. Sprinkle with freshly ground pepper if desired.
  7. SERVINGS (ABOUT 1 CUP EACH).
