Tomato Chive Souffle

Ingredients

  • 4 large tomatoes, halved and seeded
  • 3 egg yolks
  • 2 tbsp breadcrumbs
  • 1 tbsp chives
  • 2 egg whites, beaten

Method

  1. Set your oven to 375 degrees F before doing anything else
  2. Carefully, scoop out the pulp from each tomato half and reserve the tomato half shells
  3. Then, chop the tomato pulp very finely
  4. In a large bowl, add the chopped tomatoes, breadcrumbs and egg yolks and mix well
  5. Gently, fold in beaten egg whites
  6. Carefully, spoon the tomato pulp mixture into each tomato shell evenly
  7. Arrange filled tomato shells in a flat, oven-proof baking dish
  8. Cook in the oven for about 12 minutes
  9. Remove from the oven and serve immediately with the sprinkling of chives
