Low-Carb Chocolate Macaroons Recipe

Ingredients

Makes 10 MACAROONS

Prep: 15 minutes

Cooking Time: 10 minutes

Serving size 1 macaroon

  • 2 egg whites
  • 1 teaspoon (4 g) stevia in the raw
  • 1 tablespoon vanilla extract or almond extract or raspberry extract
  • sea salt
  • 1 cup unsweetened shredded coconut
  • 1 cup almond meal or almond flour
  • 3 tablespoons cacao powder

Method

  1. Preheat the oven to 350°F
  2. Line a baking sheet with parchment paper
  3. In a large bowl, preferably with a hand mixer, beat the egg whites and stevia together until stiff peaks form, about 5 minutes
  4. As peaks begin to form and the mixture becomes frothy, gradually add the vanilla extract and a pinch of salt
  5. Fold in the coconut, almond meal, and cacao powder and mix everything together
  6. Be careful not to overmix; you want the batter to be fairly thick
  7. Scoop out about 11/2 tablespoons worth in your hands and place on the baking sheet
  8. Repeat with the remaining batter; you should have 10 macaroons
  9. Bake for 15 to 20 minutes, or until the top is golden brown
  10. Let the macaroons cool and stiffen, about 10 minutes, before enjoying them
