- 2 egg whites
- 1 teaspoon (4 g) stevia in the raw
- 1 tablespoon vanilla extract or almond extract or raspberry extract
- sea salt
- 1 cup unsweetened shredded coconut
- 1 cup almond meal or almond flour
- 3 tablespoons cacao powder
Method
- Preheat the oven to 350°F
- Line a baking sheet with parchment paper
- In a large bowl, preferably with a hand mixer, beat the egg whites and stevia together until stiff peaks form, about 5 minutes
- As peaks begin to form and the mixture becomes frothy, gradually add the vanilla extract and a pinch of salt
- Fold in the coconut, almond meal, and cacao powder and mix everything together
- Be careful not to overmix; you want the batter to be fairly thick
- Scoop out about 11/2 tablespoons worth in your hands and place on the baking sheet
- Repeat with the remaining batter; you should have 10 macaroons
- Bake for 15 to 20 minutes, or until the top is golden brown
- Let the macaroons cool and stiffen, about 10 minutes, before enjoying them
