Ingredients
- 1 1/2 C. raspberry puree
- 2 tbsp sugar
- 4 egg whites
- 1/4 tsp lemon juice
- 1 tbsp sugar, for ramekins
Method
- Set your oven to 400 degrees F before doing anything else and lightly, grease 4 ramekins
- Then sprinkle each ramekin with sugar
- In a blender, add the raspberry puree and 1 tbsp of the sugar and pulse at medium speed for about 1 minute
- Transfer the mixture into a large bowl
- In a bowl, add the egg whites, sugar and lemon juice and beat until stiff and fluffy
- Gently, fold the egg whites into the raspberry mixture
- Divide the mixture into the prepared ramekins evenly
- Cook in the oven for about 12-15 minutes
- Remove from the oven and serve immediately
