Brazilian Fruit Souffle
Ingredients
- butter-flavored cooking spray
- 5 tbsp sugar
- 2 bananas
- 1 tbsp fresh lime juice
- 1 large egg yolk
- 3 large egg whites
- 1 pinch salt
Method
- Set your oven to 400 degrees F before doing anything else and arrange a rack in the center of the oven
- Lightly, grease a 4 (1-C ) ramekins with cooking spray
- Dust each ramekin with 1/2 tablespoon of sugar
- Shake and roll each ramekin to coat the bottom and sides evenly
- In a food processor, add the bananas, egg yolk, lime juice and 2 tbsp of the sugar and pulse until smooth
- Transfer the pureed mixture into a large bowl
- In a glass bowl, add the egg whites with a pinch of salt and beat until soft peaks form
- Add remaining 1 tbsp of the sugar and beat until glossy and firm
- With a rubber spatula, fold 1/4 the whipped whites into the banana mixture
- Now, gently fold in the remaining whites
- Divide the mixture into the prepared ramekins evenly and tap them lightly on a counter top to remove the air bubble
- Arrange ramekins onto a baking sheet and cook in the oven for about 15 minutes
- Remove from the oven and serve immediately
