Quick Tuna Noodle Casserole

Ingredients

  • 12-oz. pkg. egg noodles
  • 1/4 cup chopped onion
  • 2 tbsp. butter
  • 2 tbsp. flour
  • 11-oz. can condensed cheddar cheese soup
  • 1 soup can milk
  • 9 1/4-oz. can tuna, drained
  • 1 cup frozen corn
  • 1/4 cup parmesan cheese or buttered bread crumbs

Method

  1. Preheat oven to 375F
  2. Cook egg noodles as directed on package; drain and set aside
  3. Meanwhile, in 4-qt saucepan, cook onion in butter until tender but not browned
  4. Whisk in flour, then stir in cheese soup
  5. Gradually whisk in milk, cooking and stirring until thickened and bubbly
  6. Stir in tuna, noodles, and corn
  7. Turn into 2-qt casserole dish greased with non-stick cooking spray
  8. Sprinkle with parmesan cheese or buttered bread crumbs
  9. Bake, uncovered, for 25 minutes
