Vegan Tomatillo Salsa

Ingredients

Makes about 1 1/2 cups

  • 5 tomatillos, husked and chopped
  • 1/3 cup chopped sweet yellow onion
  • 1/3 cup chopped fresh cilantro
  • 1 small jalapeno, seeded and minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon whole capers, plus 1 teaspoon minced
  • 1/2 teaspoon salt

Method

  1. In a glass bowl, combine all the ingredients, mix well, cover and set aside for 30 minutes before serving or cover and refrigerate until ready to use
  2. Properly stored, it will keep in the refrigerator for up to 2 days
