Banana Nut Shortbread

Banana Nut Shortbread

Ingredients

  • 3 tbsp. butter, melted
  • 3 tbsp. honey
  • 1/2 cup chopped pecans
  • 2 bananas, sliced
  • 1 cup flour 1/4 cup sugar pinch salt
  • 1/2 cup cold butter (1 stick- no substitutions)

Method

  1. Preheat oven to 375F
  2. In a non-greased 8×8 in baking pan, mix melted butter and honey
  3. Sprinkle pecans in bottom of pan
  4. Top with sliced bananas
  5. Set aside
  6. In medium mixing bowl, blend flour, salt, and sugar
  7. Add cold butter
  8. Mix well with a fork or pastry cutter until mixture resembles cornmeal
  9. Sprinkle over bananas
  10. Press shortbread down firmly with fingers or fork
  11. Bake for 35 minutes
  12. Turn upside down onto a serving plate
  13. Cut into 9 pieces
