Ingredients
CRUST:
- 1 cup shortbread cookie crumbs
- 1/3 cup walnuts
- 2 tablespoons sugar
- 8 tablespoons unsalted butter, melted
- 1 3/4 cup milk chocolate, melted
- 1/2 cup heavy whipping cream
- 1/2 cup malted milk powder
- 2 pounds cream cheese, softened
- 1 cup granulated sugar
- 4 extra-large eggs, at room temperature
- 1 cup sour cream
- 2 teaspoons pure vanilla extract
Method
- Preheat oven to 300F
- In a food processor, pulse cookies, walnuts and sugar until finely ground
- Stir in butter
- Press into the bottom and 1 inch up the sides of a 9 inch springform pan
- Chill for 30 minutes
- In a small saucepan, bring heavy cream to a boil
- Remove from heat and whisk in malted milk powder
- Cover and let steep for 10 minutes
- Strain cream and set aside
- In a large mixing bowl, beat cream cheese and sugar until fluffy
- Add the eggs one at a time until just combined
- Stir in sour cream and vanilla
- Stir in the strained cream and melted chocolate until well combined
- Pour into crust
- Place cheesecake pan in a baking pan filled with 1 inch of water
- Bake for 90 to 100 minutes, until center is almost set
- Cool, cover and chill overnight
- Garnish suggestion – drizzle with melted chocolate
