Ingredients
Makes about 2 dozen cookies
- 1 cup slivered almonds
- ¾ cup vegan margarine
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
Method
- Preheat the oven to 350°F
- Grind the almonds in a food processor
- Add the margarine, sugar, vanilla and salt and process until well blended
- Add the flour, 1/2 cup at a time, pulsing to combine after each addition
- Press the mixture into a dough ball
- Pinch off pieces about 1 inch in diameter and roll into balls
- Flatten the balls and arrange them on an ungreased baking sheet, about 1 inch apart
- Bake until golden, about 12 minutes
- Cool the cookies slightly before transferring to a wire rack to cool completely
- Store in an airtight container
