Salmon Tagliatelle Seafood Recipe

Ingredients

  • 213 gram canned salmon — (pink or red)
  • 397 gram canned tomatoes — chopped
  • 213 gram canned pimento pepper — chopped
  • 1 fresh chilli peppers — de-seeded, chopped
  • 2 teaspoons paprika pepper
  • 1 small onion — finely chopped
  • 1 courgette — diced
  • 1 lemon — juiced
  • 1 teaspoon freshly chopped coriander
  • salt and black pepper — (to taste)
  • 175 gram fresh or dried tagliatelle
  • 25 grams creamed coconut
  • flaked coconut to garnish

Method

  1. Drain the can of salmon, break the fish into pieces, set aside
  2. Put tomatoes, chillies, pimento pepper, paprika, onion, courgette, lemon juice and coriander into a saucepan
  3. Bring to boil
  4. Simmer for 5 minutes, season
  5. Cook pasta
  6. Add salmon and creamed coconut to sauce
  7. Heat gently, for 2-3 minutes
  8. Stir lightly
  9. Spoon over drained pasta
  10. Garnish
  11. Serves 2
