Ingredients

  • 1 package yellow cake mix, prepared according to directions.
  • 4 eggs
  • 2 lb. Ricotta cheese
  • 1/2 cup sugar
  • 1 tbsp. vanilla

Method

  1. Preheat oven to 350F
  2. Pour prepared cake mix into greased 9×13 in pan
  3. Set aside
  4. Mix eggs, sugar, cheese and vanilla together
  5. Gently pour this mixture over the cake batter
  6. Bake for 60 minutes or until cake tests done, using a toothpick
  7. It should be a light golden color
  8. Let cake cool for 10 minutes, then invert onto serving dish
  9. The cheese filling, which sank to the bottom while cooking, will now be on the top
