Low Fat Herbed Parmesan Oven Fries

Ingredients

  • 1 1/2 pound baking potatoes, peeled
  • nonstick cooking spray
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • Method

  • Preheat oven to 400°F.
  • Cut potatoes lengthwise into 1/4 inch thick slices, then cut the slices lengthwise into 1/4-inch-wide sticks.
  • Place potatoes in a large bowl, lightly spray with nonstick cooking spray; toss to coat.
  • Add the Parmesan, oregano, rosemary and pepper; toss again to coat thoroughly.
  • Transfer potatoes to two baking sheets; bake for 40 minutes, turning every 10 minutes, or until potatoes are golden brown and crisp.
  • Place the fries on a platter, sprinkle with salt, and serve.
  • Note: Be sure to spread out the fries on the baking sheets so there’s plenty of room for them to bake to a nice crispness.
