Keto Cheesy Onion Soup

Ingredients

  • 1 quart (960 ml) beef broth
  • 1 medium onion
  • 1/2 cup (120 ml) heavy cream
  • 1/2 cup (120 ml) low-carb milk
  • 1 1/2 cups (180 g) shredded sharp cheddar cheese
  • guar or xanthan (optional).
  • salt and pepper to taste.

Method

  1. Pour the beef broth into a large saucepan and start it heating over a medium-high flame
  2. Slice the onion paper-thin and add it to the broth
  3. When the broth starts to boil, turn the heat to low and let the whole thing simmer for 1 hour
  4. If you like, you can do this ahead of time; turn off the heat and let the whole thing cool, refrigerate it, and do the rest later
  5. If you do this, bring the broth up to heat again before proceeding
  6. Gently stir in the cream and the low-carb milk
  7. Now stir in the cheese, a bit at a time, until its all melted in
  8. Thicken a little if you want with guar or xanthan but stir with a ladle or spoon instead of a whisk-you don’t want to break up the strands of onion
  9. Add salt and pepper to taste and serve
