Keto Mixed Berry Cups Recipe

Ingredients

  • 1 package (4-serving size) sugar-free raspberry gelatin
  • 1 cup (240 ml) boiling water
  • 2 teaspoons lemon juice
  • grated rind of 1/2 orange.
  • 3/4 cup (100 g) frozen blackberries, partly thawed
  • 1 cup (240 ml) heavy cream, divided
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon Splenda (optional)

Method

  1. Put the gelatin, water, lemon juice, and orange rind in a blender and whirl for 10 to 15 seconds to dissolve the gelatin
  2. Add the blackberries and blend again, just long enough to mix in the berries
  3. Put the blender container in the refrigerator for 10 minutes or just until the mixture starts to thicken a bit
  4. Add 3/4 cup (180 ml) heavy cream and run the blender just long enough to mix it all in (10 to 15 seconds)
  5. Pour into 5 or 6 pretty little dessert cups and chill
  6. Whip the remaining 1/4 cup (60 ml) of cream with vanilla and Splenda (if using) to garnish

Makes 5 servings

  1. Each with 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 2 grams of protein
