Ingredients
- 4 pounds pork baby back ribs (about 2 sides) or your favorite ribs
SOY – GINGER BRAISING SAUCE
- 1 orange
- 2 cups dry red wine
- 1/2 cup heavy soy sauce
- 1/4 cup brown sugar
- 2 tablespoons oyster sauce
- 2 tablespoons hoisin sauce
- 1 cinnamon stick
- 10 juniper berries — crushed
- 6 whole cloves
- 3 dried red chiles (optional)
- 1/4 cup thinly sliced fresh ginger
- 10 cloves garlic — peeled and crushed
Method
- Ask the butcher to cut the ribs across the bone into 2-inch-wide strips.
- Remove the membrane from the underside of the ribs.
- Then cut the strips into 6-inch lengths.
- To make the braising sauce, in a 4-quart saucepan, remove all the orange skin with a potato peeler Combine the orange skin with all the remaining ingredients for the sauce.
- Bring to a boil, cover decrease the heat to a simmer and allow the sauce to simmer for 30 minutes.
- To braise the ribs, add the ribs to the pot.
- Cover the pot and simmer until the meat is tender about 1 hour.
- Serve at once accompanied by a little of the braising liquid.
- If you are not serving the ribs immediately you can turn off the heat and leave the saucepan at room temperature for up to 4 hours.
- You can also refrigerate the ribs submerged in the sauce for up to a day in advance of serving.
- To reheat the ribs, bring the sauce to a simmer arid allow the ribs to simmer for 5 minutes.
