Ingredients
Makes 1 serving
- 1/2 mashed banana
- 1 tablespoon almond butter (or peanut butter)
- 1/2 teaspoon cocoa powder
- 1/4 teaspoon pure maple syrup or raw honey
- 1 egg
- 1-2 sliced strawberries
Method
- Lightly grease one small ramekin with oil of choice
- Mash banana into the bottom, distributing evenly
- Combine the almond butter, cocoa powder, maple syrup or raw honey, then working in small spoonfuls, dollop evenly over the top of the mashed banana
- Crack one egg over top
- Cover with a paper towel and microwave for 30 seconds
- Gently swirl any remaining uncooked egg around the ramekin and microwave uncovered another 35-45 seconds until egg is fully cooked
- Let cool slightly then top with sliced strawberries and serve
