Easy Keto Avocado Toast
Ingredients
Yield: 2 servings
- 4 thick slices Seed Bread (see Seed Bread)
- 1 medium Hass avocado (7½ ounces/212g)
- 1 tablespoon lime or lemon juice
- 1 teaspoon crushed garlic
- salt
- ground black pepper
Suggested Toppings.
- microgreens
- broccoli sprouts
- sliced radishes
- sliced tomatoes
- sliced scallions (green parts only)
- everything bagel mix (see Everything Bagel Mix)
Method
- Preheat the oven to 300°F (150°C)
- Place the slices of bread directly on the oven rack and bake for 5 minutes, or until slightly toasted
- Remove the toast from the oven
- Cut the avocado in half, remove the pit, and scoop the flesh into a small mixing bowl
- Add the lime juice and garlic and mash until the ingredients are evenly distributed
- Divide the avocado mixture evenly among the pieces of toast, sprinkle with salt and pepper to taste, and top as desired
- Refrigerate the bread, avocado mixture, and toppings separately in tightly sealed containers for up to 2 days
