Crock Pot Fiesta Chicken Slow Cooker Recipe
Ingredients
- 1 small Yellow Onion, sliced. 1 bell pepper, sliced
- 3-4 lbs of chicken (boneless, skinless thighs)
- 1 tbsp taco seasoning
- 1/4 cup chicken bone broth or stock 1/4 cup cilantro
Method
- Thinly slice the onion and bell pepper and place in crock pot
- Cut limes in halves and squeeze in juice
- Add cilantro
- Place in chicken
- Add two Tbsps of taco seasoning
- Turn the chicken over and sprinkle the remaining seasoning on them
- Add the chicken broth
- Cover and cook on high for four hours
