Ingredients

- 2 slices bacon
- 1 Egg
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 1/2 cups cooked regular rice – up to 2
Method
- Cook bacon; drain and crumble, reserving drippings.
- Fry egg to well-done stage in drippings.
- Remove egg, and chop; reserve drippings.
- Saute onion and green pepper in drippings; add bacon, egg, and rice.
- Cover; warm over low heat.
