Crispy Tofu with Sizzling Caper Sauce

Crispy Tofu With Sizzling Caper Sauce
Ingredients
Makes 4 servings
- 1 pound extra-firm tofu, drained, cut into 1/4-inch slices and pressed
- salt and freshly ground black pepper
- 1/2 cup cornstarch
- 3 tablespoons olive oil, plus more if needed
- 1 medium shallot, minced
- 3 tablespoons capers
- 3 tablespoons minced fresh parsley
- 2 tablespoons vegan margarine Juice of 1 lemon
Method
- Preheat the oven to 275°F
- Pat the tofu dry and season with salt and pepper to taste
- Place the cornstarch in a shallow bowl
- Dredge the tofu in the cornstarch, coating all sides
- In a large skillet, heat 2 tablespoons of the oil over medium heat
- Add the tofu, in batches if necessary and cook until golden brown on both sides, about 4 minutes per side
- Transfer the fried tofu to a heatproof platter and keep warm in the oven
- In the same skillet, heat the remaining 1 tablespoon of the oil over medium heat
- Add the shallot and cook until softened, about 3 minutes
- Add the capers and parsley and cook for 30 seconds, then stir in the margarine, lemon juice and salt and pepper to taste, stirring to melt and incorporate the margarine
- Top the tofu with caper sauce and serve immediately
