Cranberry Poppy Seed Loaf Recipe

Ingredients

  • Serving Size : 12
  • 2 1/2 cup all-purpose flour
  • 3/4 cup sugar
  • 2 tablespoon poppy seed
  • 1 tbs. baking powder
  • 1 cup skim milk
  • 1/3 cup Fleischmann’s margarine melted
  • 1/4 cup egg beaters (or other egg substitute)
  • 1 teaspoon vanilla extract
  • 2 teaspoon grated lemon peel
  • 1 cup fresh or frozen cranberries chopped
  • confectioner’s Sugar Glaze (optional).

Method

  1. Grease bottom of an 8 1/2 X 4 1/2 X 2 1/2 loaf pan; set aside
  2. In large bowl, mix flour, sugar, poppy seed and baking powder; set aside.
  3. Blend milk, margarine, egg substitute, vanilla and lemon peel; stir into flour mixture just until moistened.
  4. Stir in cranberries; spread in prepared pan.
  5. Bake at 350^ for 60-70 minutes or until done.
  6. Cool.
  7. Drizzle with glaze if desired.
  8. Makes 12 servings.
