Easy Coconut Bread

Ingredients

Servings : 4-6 dishes.

  • 1/2 cup unsweetened applesauce
  • 1 1/3 cup almond or soy milk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1 1/2 cup sweetened coconut flakes
  • 6 tablespoons coconut oil
  • 1 teaspoon lemon juice
  • 1 pinch of salt

Method

  1. In a small bowl, mix well the applesauce, milk and vanilla extract
  2. In another bowl, mix together the flour, baking powder and soda, cinnamon and a pinch of salt
  3. Stir in the coconut flakes and sugar then pour in the milk mixture
  4. Give it a good mix to combine well then pour the batter into a round cake pan, lined with baking paper
  5. Bake in a preheated oven at 350F for 30-40 minutes, or until slightly golden brown on the edges and fragrant
