Ingredients
Makes 6 servings
- 4 cups cubed white bread
- 2 cups pitted and halved cherries
- 2 cups plain or vanilla soy milk
- 8 ounces soft silken tofu, drained
- 2/3 cup sugar
- 2 teaspoons pure vanilla extract
- 1/2 cup flaked sweetened coconut
Method
- Preheat the oven to 350°F
- Grease a 9-inch square baking pan
- Spread the bread cubes in the prepared baking pan
- Sprinkle evenly with the cherries and set aside
- In a blender or food processor, combine the soy milk, tofu, sugar and vanilla and blend until smooth
- Pour the liquid mixture over the bread and cherries, pressing the bread to saturate with the liquid
- Sprinkle the coconut on top, pressing into the mixture
- Bake until firm, about 45 minutes
- Allow to cool 15 minutes and serve
- Or refrigerate, 2 hours, to serve chilled
