Fresh Cherry-Vanilla Bread Pudding Recipe

Ingredients

Makes 6 servings

  • 4 cups cubed white bread
  • 2 cups pitted and halved cherries
  • 2 cups plain or vanilla soy milk
  • 8 ounces soft silken tofu, drained
  • 2/3 cup sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 cup flaked sweetened coconut

Method

  1. Preheat the oven to 350°F
  2. Grease a 9-inch square baking pan
  3. Spread the bread cubes in the prepared baking pan
  4. Sprinkle evenly with the cherries and set aside
  5. In a blender or food processor, combine the soy milk, tofu, sugar and vanilla and blend until smooth
  6. Pour the liquid mixture over the bread and cherries, pressing the bread to saturate with the liquid
  7. Sprinkle the coconut on top, pressing into the mixture
  8. Bake until firm, about 45 minutes
  9. Allow to cool 15 minutes and serve
  10. Or refrigerate, 2 hours, to serve chilled
