Cheesecake Pops Recipe

Ingredients

  • 3 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 1/3 cup sour cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 3 eggs
  • 24 lollipop sticks
  • 1 1/4 cup confectioner’s coating (or white chocolate chips), melted
  • 1 1/4 cup semisweet chocolate chips, melted
  • toasted coconut.

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, beat cream cheese and sugar until smooth
  3. Mix in sour cream, flour, vanilla and salt in that order
  4. Add eggs one at a time until just combined
  5. Pour into a 9 inch springform pan
  6. Bake for 50 minutes, until edges are just golden
  7. Cool, cover and chill overnight
  8. Use a small ice cream or cookie scoop to form 1 ½ inch round balls of cheesecake
  9. Place on a parchment lined baking sheet
  10. Push a lollipop stick into each ball
  11. Freeze until firm, about 40 minutes
  12. Dip each cheesecake ball into melted coating of choice, then roll in topping of choice such as sprinkles, coconut, nuts, etc
  13. Refrigerate for 1 hour
