Ingredients
- 2 lb. yellow squash, sliced
- 1 medium onion, sliced
- 1 tsp salt
- 1/2 tsp sugar
- 6 tbsp butter, melted
- 3 tbsp flour
- 2 eggs, slightly beaten
- 1 C. milk
- 1/2 lb. sharp cheddar cheese, grated
- 1/2 box crackers, crumbled
Method
- Set your oven to 350 degrees F before doing anything else and grease a 1 1/2-quart casserole dish
- In a pan, add the squash, sugar, salt, black pepper and enough water to cover and simmer for about 20 minutes
- Drain the squash well and transfer into a bowl
- With a potato masher, mash the squash well
- Add flour, eggs, milk, cheese and 3 tbsp of butter and mix until well combined
- Transfer the mixture into the prepared casserole dish
- Cook in the oven for about 30 minutes
- Meanwhile, in a bowl, mix together the remaining butter and cracker crumbs
- Remove the casserole dish from oven and sprinkle with the cracker crumb evenly
- Cook in the oven for about 10 minutes more
