Cheddar Squash Souffle Recipe

Ingredients

  • 2 lb. yellow squash, sliced
  • 1 medium onion, sliced
  • 1 tsp salt
  • 1/2 tsp sugar
  • 6 tbsp butter, melted
  • 3 tbsp flour
  • 2 eggs, slightly beaten
  • 1 C. milk
  • 1/2 lb. sharp cheddar cheese, grated
  • 1/2 box crackers, crumbled

Method

  1. Set your oven to 350 degrees F before doing anything else and grease a 1 1/2-quart casserole dish
  2. In a pan, add the squash, sugar, salt, black pepper and enough water to cover and simmer for about 20 minutes
  3. Drain the squash well and transfer into a bowl
  4. With a potato masher, mash the squash well
  5. Add flour, eggs, milk, cheese and 3 tbsp of butter and mix until well combined
  6. Transfer the mixture into the prepared casserole dish
  7. Cook in the oven for about 30 minutes
  8. Meanwhile, in a bowl, mix together the remaining butter and cracker crumbs
  9. Remove the casserole dish from oven and sprinkle with the cracker crumb evenly
  10. Cook in the oven for about 10 minutes more
