Carrot Souffle Recipe

Ingredients

  • nonstick cooking spray
  • 5 large eggs, separated
  • 2 C. carrots, finely grated
  • 1 C. sugar
  • 3/4 C. matzo meal
  • 1/2 C. vegetable oil
  • 1 tsp lemon juice
  • 2 tbsp orange juice
  • 1 (20 oz.) cans crushed pineapple in syrup

Method

  1. Set your oven to 350 degrees F before doing anything else and grease a 9×9-inch square baking dish with the cooking spray
  2. In a small bowl, add the egg yolks and beat slightly
  3. In another large bowl, add the egg whites and beat until stiff
  4. Gently, fold in carrots, sugar, and matzo meal
  5. Add the whipped egg yolks, lemon juice, orange juice, oil and pineapple with heavy syrup and gently, stir to combine
  6. Transfer the mixture into the prepared baking dish
  7. Cook in the oven for about 40-45 minutes
