Air Fryer Chocolate-Covered Maple Bacon

Ingredients

SERVES 2.

  • 8 slices sugar-free bacon
  • 1 tablespoon granular erythritol
  • 1/3 cup low-carb, sugar-free chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 teaspoon maple extract

Method

  1. Place bacon into the air fryer basket and sprinkle with erythritol
  2. Adjust the temperature to 350°F and set the timer for 12 minutes
  3. Turn bacon halfway through the cooking time
  4. Cook to desired doneness, checking at 9 minutes
  5. (Smaller air fryers will cook much faster
  6. When bacon is done, set aside to cool
  7. In a small microwave-safe bowl, place chocolate chips and coconut oil
  8. Microwave for 30 seconds and stir
  9. Add in maple extract
  10. Place bacon onto a sheet of parchment
  11. Drizzle chocolate over bacon and place in refrigerator to cool and harden, about 5 minutes
