Ingredients
- slices low-salt bacon, cut into ½-inch (1 3 cm) pieces
- 1 cup (160 g) finely chopped onion
- 700 ml low-salt chicken broth
- 5 large potatoes, diced
- ½ teaspoon dill weed
- ½ teaspoon white pepper
- ½ cup (63 g) flour
- 700 ml fat-free evaporated milk
Method
- Place bacon and onion in a large, deep skillet
- Cook over medium-high heat until bacon is evenly brown and onions are soft
- Drain off excess grease
- Transfer the bacon and onion to a slow cooker and stir in chicken broth, potatoes, dill weed, and white pepper
- Cover and cook on low 6 to 7 hours, stirring occasionally
- In a small bowl, whisk together the flour and milk
- Stir into the soup
- Cover and cook another 30 minutes before serving
- Yield: 6 servings
- Per serving: 483 g water; 401 calories (10% from fat, 19% from protein, 71% from carb)
