Creamy Potato Soup Slow Cooker Recipe

Ingredients

  • slices low-salt bacon, cut into ½-inch (1 3 cm) pieces
  • 1 cup (160 g) finely chopped onion
  • 700 ml low-salt chicken broth
  • 5 large potatoes, diced
  • ½ teaspoon dill weed
  • ½ teaspoon white pepper
  • ½ cup (63 g) flour
  • 700 ml fat-free evaporated milk

Method

  1. Place bacon and onion in a large, deep skillet
  2. Cook over medium-high heat until bacon is evenly brown and onions are soft
  3. Drain off excess grease
  4. Transfer the bacon and onion to a slow cooker and stir in chicken broth, potatoes, dill weed, and white pepper
  5. Cover and cook on low 6 to 7 hours, stirring occasionally
  6. In a small bowl, whisk together the flour and milk
  7. Stir into the soup
  8. Cover and cook another 30 minutes before serving
  9. Yield: 6 servings
  10. Per serving: 483 g water; 401 calories (10% from fat, 19% from protein, 71% from carb)
