Ingredients
Makes 4 servings
- ¾ cup wild rice
- 3 cups cooked or 2 (15.5-ounce) cans black beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 teaspoon dried marjoram
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups fresh baby spinach
Method
- Combine the wild rice in a large saucepan with 3 cups of salted water
- Bring to a boil, then reduce heat to low, cover and simmer for 40 minutes or until tender
- Add the beans, tomatoes, marjoram, salt and pepper
- Cover and cook over low heat, stirring occasionally, until the flavors are well combined, about 15minutes, adding a splash of water if too dry
- Stir in the spinach and cook until the spinach is wilted and the flavors have blended, about 5minutes
- Taste, adjusting seasonings if necessary
- Serve immediately
