Ingredients
- 2 tablespoons french mustard (or any other soft mustard to taste)
- 1/3 cup (80ml) balsamic vinegar (approx to taste)
- 1/2 cup (120ml) sunflower oil (approx to taste)
- a good squeeze of lemon
- 1/2 tsp sugar to taste
Method
- Mix the mustard, sugar thoroughly then slowly add the lemon juice
- Slowly add half the balsamic vinegar taking care not to let separate
- Very slowly add half the oil taking care not to let separate
- Repeat with remaining vinegar then oil taking care not to let separate
- Chill for 1 hour and mix again before serving
