Ingredients
Hawaiian Chicken:
- 1.5-2lbs of boneless skinless chicken thighs
- 1 tbsp Hawaiian sea salt
- 1 tbsp liquid smoke
Chili Lime Mango Salsa:
- 1 large mango, chopped
- 2 stalks of green onion, chopped
- 6 sprigs of cilantro, diced
- juice of 1 lime.
- 1 tsp chili powder
- fresh guacamole
- lettuce leaves
Method
- Add the chicken thighs coated with liquid smoke and the Hawaiian sea salt to the crock pot
- Cook covered for 5 hours on low until the chicken is done
- Shred the chicken
For the salsa, combine the chopped mango, green onions, cilantro, chili and lime and mix well and allow to sit for 15 minutes
- Place some chicken with the salsa into each lettuce leaf and serve!
