Air Fryer Almond Butter Cookie Balls Recipe

Ingredients

YIELD s 10 balls (1 ball per serving)

  • 1 cup almond butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup low-carb protein powder
  • 1/4 cup powdered erythritol
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup low-carb, sugar-free chocolate chips
  • 1/2 teaspoon ground cinnamon

Method

  1. In a large bowl, mix almond butter and egg
  2. Add in vanilla, protein powder, and erythritol
  3. Fold in coconut, chocolate chips, and cinnamon
  4. Roll into 1 balls
  5. Place balls into 6 round baking pan and put into the air fryer basket
  6. Adjust the temperature to 320°F and set the timer for 10 minutes
  7. Allow to cool completely
  8. Store in an airtight container in the refrigerator up to 4 days
