Vegan Mock Cottage Cheese

Ingredients

Makes 2 cups

  • 1 pound firm tofu, drained
  • 1 1/2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons apple cider vinegar
  • 2 teaspoons canola or grapeseed oil
  • 1 teaspoon salt

Method

  1. Steam the tofu for 5 minutes
  2. Set aside to cool
  3. Transfer half of the tofu to a blender or food processor
  4. Add the lemon juice, vinegar, oil and salt and process until smooth
  5. In a large bowl, mash the remaining steamed tofu with a fork until crumbly
  6. Add the pureed tofu mixture and stir to combine
  7. Cover and chill for at least 1 hour before using
