Ingredients
Makes 4 servings
- 1 pound carrots, shredded
- 2 oranges, peeled, segmented and chopped
- 1/2 cup unsalted roasted cashews
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fresh orange juice
- 2 tablespoons fresh lime juice
- 2 teaspoons sugar
- salt and freshly ground black pepper
- 1/3 cup olive oil
Method
- In a large bowl, combine the carrots, oranges, cashews and cilantro and set aside
- In a small bowl, combine the orange juice, lime juice, sugar and salt and pepper to taste
- Whisk in the oil until blended
- Pour the dressing over the carrot mixture, stirring to lightly coat
- Taste, adjusting seasonings if necessary
- Toss gently to combine and serve
