California Pasta Salad Recipe

Ingredients

Makes 4 servings

  • 8 ounces penne
  • 1/2 medium red bell pepper, cut into matchsticks
  • 1 medium carrot, shredded
  • 3 green onions, minced
  • ¾ cup kalamata olives, pitted and halved ¾ cup coarsely chopped walnuts
  • 1/3 cup olive oil
  • 3 tablespoons Meyer lemon juice
  • salt and freshly ground black pepper
  • 2 ripe Hass avocados
  • 1/4 cup torn fresh basil leaves

Method

  1. In a pot of boiling salted water, cook the penne, stirring occasionally, until al dente, about 10minutes
  2. Drain well and transfer to a large bowl
  3. Add the bell pepper, carrot, green onions, olives and walnuts and toss to combine
  4. Set aside
  5. In a separate bowl, combine the oil, lemon juice and salt and black pepper to taste
  6. Pit, peel and dice the avocado and add to the dressing, tossing to coat
  7. Add the avocado mixture to the pasta mixture along with the basil leaves and toss gently to combine
  8. Taste, adjusting seasonings if necessary and serve immediately
