Ingredients
Makes 4 servings
- 8 ounces penne
- 1/2 medium red bell pepper, cut into matchsticks
- 1 medium carrot, shredded
- 3 green onions, minced
- ¾ cup kalamata olives, pitted and halved ¾ cup coarsely chopped walnuts
- 1/3 cup olive oil
- 3 tablespoons Meyer lemon juice
- salt and freshly ground black pepper
- 2 ripe Hass avocados
- 1/4 cup torn fresh basil leaves
Method
- In a pot of boiling salted water, cook the penne, stirring occasionally, until al dente, about 10minutes
- Drain well and transfer to a large bowl
- Add the bell pepper, carrot, green onions, olives and walnuts and toss to combine
- Set aside
- In a separate bowl, combine the oil, lemon juice and salt and black pepper to taste
- Pit, peel and dice the avocado and add to the dressing, tossing to coat
- Add the avocado mixture to the pasta mixture along with the basil leaves and toss gently to combine
- Taste, adjusting seasonings if necessary and serve immediately
