Ingredients
- Serving Size : 6
- 1/4 cup vegetable broth
- 1/2 cup onion – chopped
- 2 cloves garlic – minced
- 20 ounces tomatoes, low sodium
- 1 cup navy beans, cooked
- 10 ounces ziti pasta
- 1/2 cup parsley – chopped
- 1/4 teaspoon pepper
- 1/2 teaspoon thyme – ground
- 1/2 teaspoon basil
Method
- Cook ziti al dente and drain.
- Heat stock add onions and garlic, saute until clear.
- Add tomatoes and simmer 10 minutes.
- Add beans and seasonings, simmer 10 more minutes.
- Serve over ziti and sprinkle with parsley.
