Wheat Berry Salad With Dried Cranberries And Pomegranate Vinaigrette Pressure Cooker Recipe

Ingredients

SERVES 8

POMEGRANATE VINAIGRETTE

  • ¼ cup raspberry vinegar
  • ¼ cup pomegranate juice
  • 1/3 cup fruity olive oil
  • sea salt and freshly ground black pepper, to taste

SALAD

  • 4½ cups pressure-cooked wheat berries, at room temperature
  • 1¼ cups dried cranberries, soaked in hot water 15 minutes and drained
  • 1½ cups grated carrots
  • 1 cup finely chopped red onion
  • 3 tablespoon minced fresh flatleaf parsley

Method

  1. In a small bowl, whisk the vinaigrette ingredients together
  2. In a large serving bowl, combine the wheat berries, cranberries, carrots, onion, and parsley
  3. Toss the salad with enough of the vinaigrette so it is lightly coated
  4. Store in the refrigerator, covered, 30 minutes to 2 hours, to let the flavors meld
  5. Serve the salad chilled or room temperature
