Wheat Berry Salad With Dried Cranberries And Pomegranate Vinaigrette Pressure Cooker Recipe
Ingredients
SERVES 8
POMEGRANATE VINAIGRETTE
- ¼ cup raspberry vinegar
- ¼ cup pomegranate juice
- 1/3 cup fruity olive oil
- sea salt and freshly ground black pepper, to taste
SALAD
- 4½ cups pressure-cooked wheat berries, at room temperature
- 1¼ cups dried cranberries, soaked in hot water 15 minutes and drained
- 1½ cups grated carrots
- 1 cup finely chopped red onion
- 3 tablespoon minced fresh flatleaf parsley
Method
- In a small bowl, whisk the vinaigrette ingredients together
- In a large serving bowl, combine the wheat berries, cranberries, carrots, onion, and parsley
- Toss the salad with enough of the vinaigrette so it is lightly coated
- Store in the refrigerator, covered, 30 minutes to 2 hours, to let the flavors meld
- Serve the salad chilled or room temperature
