Walnut Carrot Cake Recipe

Ingredients

Servings : 4-6 dishes.

  • 10 dates, pits removed
  • 2 cups grated carrots
  • 1/2 cup sweetened applesauce
  • 1/2 cup golden raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 3/4 cup whole wheat flour
  • 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts, chopped
  • 1 pinch of salt

Method

  1. Put the dates in a small blender or food processor and pulse a few times until a paste forms
  2. Transfer them into a bowl then stir in the carrots, applesauce, raisins, cinnamon, ginger and a pinch of salt
  3. Mix until well combined then fold in the flour, baking powder and soda
  4. Spoon the batter into a greased round cake pan then sprinkle the chopped walnuts on top
  5. Bake in a preheated oven at 350F for 30-40 minutes
  6. Let it cool in the pan and serve sprinkled with powdered sugar
