Vegetable And Surimi Seafood Stir-Fry Recipe

Ingredients

  • 2 tablespoons vegetable oil
  • 1 clove garlic — minced
  • 1/2 red bell pepper — sliced in 1/4″
  • — strips
  • 1/2 yellow bell pepper — sliced in 1/4″
  • — strips
  • 1 cup Chinese pea pods
  • 1 cup brown mushrooms — sliced
  • 2 cups surimi seafood
  • 1/2 cup green onions — sliced
  • salt and pepper
  • 2 tablespoons sesame seeds — toasted
  • hot cooked rice

Method

  1. Place oil in skillet or wok and heat until very hot
  2. Add garlic and stir-fry for 30 seconds
  3. Add red and yellow pepper strips, pea pods and mushrooms
  4. Stir-fry for 1 minute, then add 2 tbsp water, cover and cook 2 minutes longer, stirring frequently until vegetables are crisp-tender
  5. Add surimi and green onions
  6. Stir-fry 1 minute longer
  7. Season to taste with salt and pepper
  8. Sprinkle with sesame seeds and serve on hot cooked rice
