Ingredients
Makes 4 servings
- 4 tablespoons olive oil
- 1 medium yellow onion, minced
- 4 cups fresh baby spinach
- salt and freshly ground black pepper
- 1 pound firm tofu, drained
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¾ cup vegetable broth or water
- 2 tablespoons soy sauce
Method
- Preheat the oven to 350°F
- Lightly oil a 3 quart-casserole or round baking dish and set aside
- In a large skillet, heat 1 tablespoon oil over medium heat
- Add the onion, cover and cook until soft, about 10 minutes
- Stir in the spinach and season with salt and pepper to taste
- Cover and cook until the spinach is wilted, about 3 minutes
- Set aside
- In a food processor, combine the tofu and the onion and spinach mixture and process until blended
- Add the flour, baking powder, broth, soy sauce and remaining 3 tablespoons oil and process until smooth
- Scrape the mixture into the prepared casserole and bake until firm, about 60 minutes
- Serve immediately
